- Why did you choose to work with Mi Quetzal Restaurant?
In the late 1980’s and throughout the 90’s, Guatemalan culture was not very well known in the area. “I grew up in Stone Park and my father’s job was in Bensenville, so we would be in the area constantly” says author Dennis Avelar. “Outside of the city [of Chicago], I don’t recall seeing any Guatemalan restaurants or bakeries or businesses.” So when the chance presented itself to work with a Guatemalan business, within the community we had known for such a long time, we jumped at the opportunity.
Mi Quetzal Restaurant opened their doors to us and made us feel welcomed from the moment we stepped through the doors with copy of The Blue Q in hand. What they saw in us was more than just a connection to Guatemala, but rather a dreamer whose mission to achieve a global goal began with a story of the same bird that is so prominently featured within their small business.
